Move over, banana bread... carrot-zucchini bread has arrived. It's not health food, but it's good food. Loaded with vegetables and the crunch of pecans, it also oozes sweetness and with its decadent cream-cheese frosting. You'll want to make this loaf. Bake along with Amy from her cookbook ‘Kosher Style’ and enjoy a study snack to keep you going all night long and have breakfast ready for tomorrow morning, if there’s any left over!

What You’ll Need To Bake Along: 

Ingredients:

2 cups flour 

2 tsp ground cinnamon 

½ tsp baking soda 

¼ tsp baking powder 

¼ tsp sea salt 

1 cup sugar

1 cup packed brown sugar 

¾ cup vegetable oil 

3 eggs 

1 tsp vanilla extract 

1 cup grated zucchini (about 1 medium) 

1 cup grated carrot (about 1 medium) 

1 cup pecan pieces, toasted and cooled 

 

For the icing 

¼ cup butter, softened 

½ block (4oz) full-fat cream cheese, softened 

1tsp vanilla extract 

1 ½ cups icing sugar

9X5X3-inch loaf pan
